Bernardo Morales Gilbón, GM of Lola at Sunset Hospitality Group, unveils how he aims to deliver top-notch Spanish hospitality.

Your motto is “There is always someone who aspires to be just like you.” Can you elaborate on this philosophy and how it has guided your career?

This motto has consistently been a guiding principle throughout my career, shaping my decisions and professional approach. Additionally, I’ve had the privilege of learning from incredible leaders like Ena Cecilia Bolio, former corporate director of customer care at Palace Resorts in Mexico. Through her mentorship, I learned the importance of being a role model and its impact on those around me. Now, I strive to do the same for the younger generation in hospitality, including our waitstaff, bartenders and hostesses. I believe in leading by example, continually improving myself and motivating others to pursue excellence in their careers.

How do you ensure that Lola maintains its reputation for authentic Spanish cuisine and warm hospitality?

At Lola Taberna Española, we consistently focus on staying authentic while also bringing fresh energy to the dining experience. Furthermore, our menu highlights Spain’s rich culinary traditions, featuring classic tapas and flavorful dishes that reflect the essence of Spanish cuisine. Moreover, the atmosphere is always lively, with flamenco shows and the warm hospitality of our staff creating a true taberna feel. Ultimately, our goal is to ensure that every guest leaves with a genuine taste of Spain and unforgettable memories.

What are the challenges you face?

Dubai’s restaurant scene is incredibly competitive, and as a result, standing out requires constant innovation, creativity and exceptional offerings. Therefore, at Lola, we embrace this challenge by introducing exciting, themed nights and special events to engage our guests continually. For example, our Fabada Asturiana brunch in September and Tablao Nights feature regional artists performing with our resident Flamenco Duo. Additionally, these unique experiences make Lola not just a restaurant but a destination where culture, cuisine and entertainment come alive together.

Lola is a favorite among expats. How do you foster a sense of community?

We build a sense of community at Lola by making everyone feel welcome and valued, fostering a friendly atmosphere. Additionally, our team works hard to create personal connections with our guests, whether by remembering their names or favorite dishes. Consequently, this attention to detail helps guests feel like they’re part of the Lola family. As a result, first-time visitors often become regulars, creating a warm, inviting environment that people want to return to.

What are your plans for Lola Taberna Española? Are there any new concepts or expansion projects in the works?

We are currently focused on renovating our terrace to transform it into a beautiful Andalusian patio, thus enhancing the overall dining experience. Moving forward, we plan to continue expanding our brand while staying true to our Spanish roots. Therefore, we aim to maintain the high standards that have made Lola Taberna a beloved destination for authentic Spanish cuisine.
