Homegrown F&B experts, Gates Hospitality, have added to their culinary team with the appointment of a head chef, Gerard Brack, at their Trump International Golf Club Dubai location, Stoke House. Following a move from Wimbledon Tennis Club, UK, where he held the title of area chef, Brack will be in charge of menu development, staff training, supervising kitchen staff, budgets, costing and implementation of food safety.
“We need a strong player to oversee the kitchen at this high-volume site and Gerard is the perfect candidate for this. As we move into the summer one of Gerard’s first projects will be to refresh the current menu according to the seasonality and bring something different to current food offering,” said Naim Maadad, CEO at Gates Hospitality.
