Denmark wins Bocuse d’Or in 2023 

Denmark has won the Bocuse d’Or. The Danish team comprised chef Brian Mark Hansen and his commis, Elisabeth Madsen.

The team from Norway, led by chef Filip August Bendi and commis, Leon Haarberg Nilsen, finished second and took home the Bocuse d’Argent, with Hungary’s Bence Dalnoki and commis Patrik Nyikos coming in third.

After five-and-a-half hours of tests, which considered technique, product presentation and zero waste, the jury’s 24 members announced their decision.

“I came here to be inspired by the chefs,” explained Dominique Crenn, honorary president of this year’s edition. “I loved that there were so many countries participating, and each team told us a story.”

After winning the European selections, Brian Mark Hansen succeeded in bringing Danish cuisine to the forefront at the Grand Final, succeeding Ronni Vexe Mortensen, who finished in second place in 2021.

The famed Danish novelist Hans Christian Andersen served as inspiration for Brian Mark Hansen’s menu, which was based on fairytales.
