Akmal Anuar, chef-owner of Goldfish Dubai, talks about Michelin recognition, the evolution of Dubai’s culinary scene and the importance of collaborations.
Gaining a Michelin star is a milestone for any chef. How did this recognition change your approach to crafting dishes?
Achieving a Michelin star is not about changing your approach. Instead, it’s a recognition of what you’ve consistently done well. Moreover, it affirms your unique culinary style and the high standards you uphold. For me, the star was a validation of my philosophy. This recognition pushed me to refine my craft further, not alter it. Ultimately, it’s not about reinventing yourself after the award. Rather, it’s about staying true to what earned you that recognition.
Beyond technical skills, what intangible qualities do you believe Michelin inspectors look for in a chef and their restaurant?
Michelin inspectors seek a deeper connection between the chef, cuisine and restaurant’s concept. They evaluate the story behind the dishes, the creativity involved and how the experience reflects the chef’s vision. Additionally, consistency and originality are crucial. Equally important is the ability to deliver a cohesive, memorable dining experience that ties together every aspect of the restaurant.
Do you think Michelin stars sometimes overshadow the soul of a restaurant? Can they coexist with authenticity?
Earning a Michelin star can bring changes, such as stricter operational standards to ensure consistency. However, these adjustments may compromise a restaurant’s essence. The key is finding a balance, maintaining authenticity and soul while meeting expectations. Ultimately, the best outcome is when the star enhances the restaurant’s identity without overshadowing what makes it special.
How would you describe the evolution of Dubai’s culinary landscape over the past decade?
Dubai’s culinary scene has experienced remarkable growth, especially in recent years. Consequently, the city has become a global dining destination. Offering an incredible variety of cuisines, concepts and dining experiences, Dubai is a true melting pot. Furthermore, creativity thrives here, and the possibilities are endless. The pace of evolution has been astonishing, and I believe Dubai’s culinary future holds even greater potential.
