Host Milano 2019 will showcase future hospitality trends

The latest trends and upcoming must-haves of this sector will be revealed exclusively at Host Milano from 18-22 October. The show is organized by Fiera Milano, a world leader in professional hospitality. To date, more than 1,650 companies have registered, 43% of which are international hailing from 50 countries.

Sustainable, experiential, personalized, smart and hyper-technological are the next-generation catering and hospitality structures. From 4.0 technology such as automation or artificial intelligence to changes in tastes with a move away from the sweet-savory pairing to a range of new flavors, eating out is on the rise, despite the slowing of the world economy.

Expected trends

While Euromonitor sees a general trend of hyper-personalization, with individualized eating experiences, and made to measure sustainable portions, Forbes envisages a boom in healthy options for recreational eating at the cinema, shopping centers and airports. This growth in the catering sector is further driven by home deliveries, which will increasingly involve independent local firms as well as chains. The numbers also confirm how innovative trends are supporting consumption. According to a Censis-Coldiretti report dated November 2018, food consumption outside of the home is a market in rapid expansion valued at 78 billion Euros and growing at an annual rate of 8%.

Behind the scenes in professional kitchens

Forbes also envisages an increase in automation in the catering arena through the deployment of actual robots that will free human operators from necessary, yet mundane mechanical tasks. This will allow the operators to dedicate themselves to more creative functions. In terms of raw ingredients, Forbes foresees continued growth of vegetable-based products as well as the consolidation of clean labeling.

In terms of design, this year Host Milano will see the introduction of seven seminars on design in collaboration with POLI.design. Topics will include innovative solutions based on big data, new urban scenarios, the new luxury and the customer experience. Concurrently, the food technology lounge will focus on the impact technology has on the sector, while Futurbar by Comufficio and Consorzio FIA will present a preview of the food establishments of tomorrow.

Among the hundreds of scheduled Host Milano events, will be restaurant engineering, a behind the scenes look at evolutions in the world of eating out organized by the Professional Association of Italian Cooks offering infinite interpretations of cooking, baking and bread-making, with a special area dedicated to emerging young talents.
