In this exclusive interview, Luca Rossi, executive chef of Signor Sassi Dubai, explains how he creates a holiday vibe in the restaurant. 

How do you infuse traditional Italian holiday flavors into your menus?

It all begins with selecting the finest ingredients from across Italy, such as Romagna clams and Piedmontese veal. Furthermore, we remain committed to traditional recipes, just as our grandmothers did for those generous holiday dinners. Moreover, the finishing touch is our panettone, a festive must-have for every Italian home. It’s crafted here in Dubai by Italian artisans, using a unique recipe with a Milanese twist, specially made for Signor Sassi.

How do you adapt Italian holiday traditions to suit the multicultural tastes in Dubai?

I believe there’s no need to adapt our traditions for the holidays. Instead, I prefer preserving authenticity. Those familiar with Sassi should savor traditional holiday flavors exactly as they are in Italy.

How does the ambience of your restaurant change during the holiday season, and what role does it play in the dining experience?

The ambience is essential for a memorable dining experience. Without the right décor, a holiday menu feels incomplete. To ensure guests are immersed in the festive spirit, our restaurant will be adorned with lights and decorations. Furthermore, the ambience will capture the warmth and magic of an Italian holiday, creating a joyful atmosphere.

How do you create a memorable dining experience for guests who want to celebrate the holidays at your restaurant?

Teamwork is essential to create a truly magical experience, as it brings together every detail and festive element harmoniously. It’s the seamless combination of carefully selected elements, attention to detail and enchanting décor that makes the holiday spirit come alive. Together, these elements ensure that each visit is truly unforgettable. Holidays at Signor Sassi are all about delivering a rich menu, impeccable service, and an atmosphere that embodies the season’s warmth and joy.
