Committed to excellence and uniqueness, Four Seasons Hotels and Resorts is expanding its fine and high end dining offering in the region.

In November 2019, the iconic Bullona concept will open its first residence outside Milan at Four Seasons Hotel Cairo at Nile Plaza.

Bullona Cairo will be the second outpost of the Bullona Milano, an exclusive bar and restaurant concept and prominent hotspot for the fashionable elite of Milan.

Conceptualized by Pino Scalise and Cristiano Belloli in 2013, Bullona Milano is a contemporary experience set inside an abandoned Milanese train station, housing a seafood restaurant and fish bar, and transforming into a social hub as the evening unfolds. 

The highly anticipated Egyptian counterpart has come to life in collaboration with the original masterminds of Bullona, all of whom share a passion for the brand’s philosophy – the determination to curate an environment where visitors can enjoy a lavish evening experience from beginning to end.  Bullona Cairo will elevate the guest experience through a design and art-focused atmosphere, featuring contemporary pieces by renowned Italian artists Fabio Viale and Michele D’Agostino.

Following a six-year tenure with the Four Seasons brand at properties around the world, General Manager Emanuele Accame will oversee the operations of Bullona Cairo alongside Restaurant Manager Francesco Pelliccia, who brings years of experience in the Cairo hospitality scene. Accame said: “Bullona Cairo will be a unique and exemplary addition to the Cairo bar and restaurant landscape, and I am overjoyed to be at the forefront of this opening.”

Bullona Cairo will see Sardinian-born Chef Cristian Lisci bring the delights of the Mediterranean to Cairo, following two decades of experience at some of the most high profile restaurants in the world, including Michelin-starred Edilio in Genoa and Il Mirtillo in Megève. “Cooking has been a part of my life for nearly 25 years” notes Chef Lisci. “It is a form of art, in which I am given a blank canvas to draw on, and I am thrilled to bring Italian flavours combined with an international twist to Cairo.” The Mediterranean menu is infused with Italian flavours and will include culinary highlights such as squid ink black cod and roasted Alaskan king crab. 

The bar will feature an extensive wine list alongside classic and signature cocktails, where Head Bartender Olivia Chotard brings years of experience in the French hospitality industry. Mixologist Armando Sammarruco, who joins the team directly from Bullona Milano, will accompany Chotard in the creation of signature cocktails such as Oasi, a delicate yet delightful blend of Pinot Grigio, violette liqueur, Cointreau, peach schnapps and lime.

On another level, Amman will soon be hosting La Dame de Pic London, a two Michelin star restaurant located at Four Seasons Hotel London at Ten Trinity Square. It is coming to Amman with a distinctive menu of French cuisine for guests of La Capitale at Four Seasons Hotel Amman.

Guests are invited to embark on an incredible gastronomic journey with Head Chef Luca Piscazzi as he executes Anne-Sophie Pic’s signature cuisine at La Capitale from October 28 until November 1, 2019.

Exploring unusual cooking methods and introducing guests to new and unexpected flavour combinations, the menu will offer a fresh take on the world’s most decorated female Michelin-starred chef’s French culinary heritage from four generations of chefs.

Anne-Sophie Pic said: “French cuisine is famous for its heavy sauces, but our sauces are light. We infuse our sauces with aromatics like teas, coffees and fresh herbs. The cinnamon leaf for example, usually people will use just the cinnamon, but the cinnamon leaf is actually much better because the flavour is much fresher, much greener.”

Food connoisseurs in Amman are invited to experience beautiful dishes that are rooted in classic French techniques but presented in a light, modern style.

In the Unique Dinner that will be held on October 28, 2019, Chef Piscazzi will presents canapés and a five course tasting menu for dinner in the stylish ambience of La Capitale for JOD 95 per person.  

From October 29 – November 1, 2019, and for lunch, guests can choose from a three course tasting menu or an a la carte menu featuring signature dishes from La Dame de Pic London. Three course tasting menu, JOD 69.

For dinner, guests can choose a four or six course tasting menus, or an a la carte menu featuring signature dishes from La Dame de Pic London. Four course tasting menu, JOD 95; six course tasting menu, JOD 120.
